The flat base isn't just great for searing larger cuts of meat or fish, it also helps to maximise the contact between the heat source - vital if you're using a solid top or electric hob. Thanks to the generously-sized wooden handle, heat is kept in the pan - not in your hand, so it's much more comfortable to use in comparison to traditional steel handled woks.
