The maturing cabinet ensures that the meat matures to the highest quality. It is suitable for restaurants, butcher shops and also for home use. The coated Low-E glass provides the best thermal insulation of the refrigerator. Recommendations: - Temperature (2°C) and humidity (80%) settings for perfect dry aging of beef and pork - Meat for dry aging must be fresh (ideally within 5 days after slaughter of the animal) - Vacuum-aged meat can be used, but a maximum of 14 days (remove the vacuum film) - For the best dry aging of beef, use meat from a young cow with a normal layer of fat, well matured - Ripening options: the back beef can be hung on a hook in the refrigerator or individual pieces can be placed on shelves - if individual pieces are matured on shelves, pay attention to the protective fat layer to prevent loss (ideal cutting size is about 2-4 kg) - we recommend maturing the meat on the bone - carry protective gloves when in contact with the meat, never touch the meat with bare hands without gloves - the best maturing period is 25-28 days, but it is possible to mature the meat for longer than 4 weeks For better moisture control in the refrigerator and a more intense flavor of the meat, we recommend purchasing a Himalayan salt plate (not included) If you buy a salt plate: - unpack the salt plates and remove the foil - place the salt plates on a stainless steel plate and place the plate in the middle of the refrigerator - check every 2-3 days if there is water on the plates, if so, remove it
